Fajitas

Ingredients:
 3 green peppers
 3 onions
 3-4 ripe tomatoes
 1/2 kilo. beef , pork or chicken
 Fajita seasoning mix
 Shredded cheddar cheese
 sour cream or yogurt
 salsa

Directions:
Cut green peppers, onions, and tomatoes into slices. Cut beef , pork or boneless chicken into slices. Stir fry vegetables in a small amount of oil until tender. Remove from wok and keep warm. Stir fry meat in wok done. Add 3-4 spoonfuls of fajita (or taco) seasoning and 1/4 cup water to meat. Mix well. Add cooked onions and pepper to meat. Add tomatoes. Cook until heated through. Serve with flour tortillas. Eat with cheese, sour cream or yogurt, and salsa, as you. Serves 4.

Tacos















 Ingredients:
Lettuce
½ kilo tomatoes
1large green pepper
1 large onion
½ kilo beef
2-3 tomatoes
Taco seasoning(1 envelope or 2-3 Tbs. mix)
1 cup shredded cheddar cheese

Directions:
1.     Make 1 recipe of flour tortillas
2.     Wash and cut up lettuce into small pieces.
3.     Wash and dice tomatoes and green pepers.
4.     Grind ½ kilo of beef.
5.     Dice onions.
6.     Stir fry beef and onions until done.
7.     Add 2-3 spoonfuls of taco seasoning.
8.     Stir well and cook until thickened.

Taco Seasoning Mix

#1    2 tablespoons chili powder                               3 teaspoons salt
        5 teaspoons paprika                                          2-1/2 teaspoons cayenne pepper
        4-1/2 teaspoons ground cumin                        1/8 teaspoons cayenne pepper
        3 teaspoons onion powder
  Mix together and store up to 6 months. Use 2-1/2 Tbs. for each batch of tacos. Makes approximately 3 batches.
#2    2 tsp. each of chili powder, ground cumin, and garlic powder.

Ingredients:
2 cups Flour
4 T oil
1 tsp salt
1 tsp sugar
2/3 cup hot water

Directions:

  Mix by hand until very soft. Make 8 balls. Let sit for 10 minutes. Roll flat and very thin. Fry on a dry skillet-medium heat(after preheated). I think they are most delicious eaten hot off the skillet . ENJOY !!!!!

Flour Tortillas

 Ingredients:
4 cups flour
2 tsp. Salt
1/4 cup oil
1 cup water
Directions:
   Combine flour and salt. Mix in oil. Add water. Form dough into a ball, adding more water if necessary, until bowl is clear of all dough. Knead well on floured board. Make balls the size of an egg. Let stand for 15 minute. Roll thin with rolling pin to about the size of a salad plate. Place in a hot ungreased skillet on low heat. Cook for about 2 minute on one side. Turn and cook 1 minute longer. Makes about 2 dozen.
